Estonia is a Nordic country, which also says a lot about the Estonian cuisine: eating habits, food, ways of cooking etc. The rather sharp contrast between seasons, quite unusual for a southener, is also reflected in the rhythm of life of a people, closer to nature than the average European. An Estonian tends to be slow and introvert in autumn and winter, and much more energetic and communicative in summertime. How, what, and where an Estonian eats seems largely to be determined by the length and warmth of the days. Darkness and frost bring to the table sauerkraut and roast, brawn and black pudding, thick soup and stew. In summertime, on the other hand, it seems that people are able to survive on little but the warmth and sunlight, accompanied by everything light and fresh that gardens and forests have to offer.
Estonian cabbage cream soup
Ingredients:
Heavy cream 3 c
Water 1 c
Cabbage 1 head, chopped
Carrots 2, shredded
Zucchini 1 medium, cubed
Soy flour 1 T
Baby dill 2 T chopped
Parsley root 1, chopped
Butter by taste
DIRECTIONS:
In a soup pan, boil the cabbage and carrots until half soft. Add saltby taste, zucchini, and parsley root. In a mixing bowl, beat the flour withcream. Slowly pour the mixture into the boiling soup stirring permanently. Serve with butter and dill.
Egg Butter
Ingredients:
3 eggs
4 tbs butter
salt and pepper
Procedure
1. Hard-boil the eggs (about 10 minutes).
2. Chop the eggs. (Chop the eggs into small pieces. Larger pieces of the egg white often fail to mix with butter).
Eggs and butter before mixing
1. Mix chopped eggs with the soft butter.
2. Add salt and pepper.
Use as sandwich spread.
Estonian Herring and Potato Salad
Ingredients:
For the salad:
1 salted herring filet (schmaltz style)
2 red-skinned potatoes, boiled and cut into 1/2-inch dice
3 canned beets, cut into 1/2-inch dice
1/3 cup minced onions
1 large tart apple, cored and cut into 1/2 inch dice
1/2 cup diced dill pickles
2 hard-cooked eggs, chopped 1 cup diced cooked ham or veal
For the dressing and garnish:
1 tablespoon whole-grain mustard
1 teaspoon dry mustard
1 1/2 tablespoons cider vinegar
1 1/3 cups sour cream
1 teaspoon prepared red horseradish, drained
1/2 teaspoon sugar, or more to taste
Salt and freshly ground pepper, to taste
1 hard-boiled egg, for garnish
DIRECTIONS:
Soak the herring filet in cold water, covered, overnight. Rinse well, pat dry, and cut into half-inch cubes. Place in a large bowl and combine with the potatoes, onion, beets, apple, chopped eggs, pickles, and meats. In a small bowl, whisk the mustards with the vinegar until smooth. Stir in the remaining dressing ingredients (through the salt and pepper) and blend well. Add the dressing to the salad: toss. Transfer to a serving bowl. Serve garnished with sliced egg.
